Our story
We started with one hearth, a handful of growers and a stubborn belief that food tastes better when it is cooked slowly and served without ceremony. A decade later the menu still turns on what arrives at the back door each morning.
Everything is made in-house — the bread, the cultured butter, the vinegars we finish plates with. Nothing leaves the pass that the kitchen would not eat itself.

“Fire does most of the work here, and it does it beautifully. The short rib is worth the trip alone.”
“Warm service, restrained cooking, and a wine list with genuine point of view. A quiet triumph.”
